Hi Hemant,
Although I don't post much I have been lurking here. I tried your Chettinad Brinjal recipe and it was supereb. Thank you for all the recipes that you post here. You are such a gifted person and so selfless. I am sure the forum must be eating a lot of your time. But please remember that we all appreciate the time and effort you put in and THANK YOU.

Hello Hemant,
Never fear, we are all out here reading your every word. I am put to shame by your productivity with the keyboard. You type so much and I have some trouble finding the time to post a reply. Sorry. I DO have many questions waiting for you. Maybe this weekend I will post them in the Crisis corner. However, I must tell you...I made lemon rice. It was lovely. Limes must be an especial gift from God.

Hi Mr. Hemant
I made your Sadhabishekam Rasam and WOW! It was over even before I had a share. I gave the receipe to my daughter and she told me that it came out very well. (She is a novice to cooking). Thank you very much for the same.
Now I have a request. When I was young, we used to get "Karakkadalai", the dry non-oily variety in the stores, which was very tasty. Can you post the receipe for it? I tried, but it did not come out well.

Hi Hemantji,
The party was a success and all the credit goes to you because the Biryani and Kheema Kurma combination suggested by you worked wonders. All my guests really loved this combination and the ladies were eager to know where did I learn these wonderful recipes. I proudly and happily told them about my Guru on the net and gave them your website address. Thank you very much for the help and also for the Goda Masala recipe. When I was in Bombay I had tasted Stuffed brinjal (maharashtrian style) made with Goda Masala. Next week I will try that recipe with the Goda Masala recipe you have given. Thanks a lot once again for everything.

Hello Hemant,

Good to have you back. I recently (finally) got around to making some dishes: Musalamani Tamilnadu Biryani and a pasanda though this time with chicken due to the preferences of my guests. It was a complete meal with starters, a masoor dhal, raita, some spicy chutneys and dessert. Everyone was quite happy (I was exhausted). With no prep cook on hand all the chopping and cooking was mine to do. I have some questions about techniques on a recipe but I will post them on the Crisis Management thread. All in all the evening was quite a success. Thank you again.

Hi Hemant,
Last week I made Musalmani biryani, and it turned out very well. Now next week I have around 20 people comming to my place for dinner and my husband wants me to prepare the same biryani with chicken or mutton. Can I follow the same procedure or is it different ? How much mutton/chicken should I use for making biryani for 20 people ? By the way thanks for still remembering my request for Goda masala.

I tried vangibath and it was very tasty. Thanks a lot for the receipe. Only change i did is instead of sambar powder, i used vangibath powder. Thanks a lot once again. I have a doubt, if we put fenugreek, it will have that bitter taste, right. Do we really have to put it.

Hi Hemant,
I made Kadai Paneer for dinner today. It tastes heavenly. For kadai chicken do I just have to substitue paneer with chicken? Will it do the trick? I haven't had Kadai Paneer in a very long time. But, I recall having had a semi-dry to dry preparation of this dish. Did I add more water to it? or is this how it is supposed to be. Could you also post other variations for the Dum Aloo recipe. I'm actually looking for a dry version. Thanks!

Hello Hemantji,
THANK YOU VERY MUCH for the extremely delicious version of potato podimas. I tried it with fresh potatoes so it was quite time consuming but it was very worthwhile.
Usually gurus withhold some aspect of their skill 'cos they always want to be one up over their sishyas -- but you give us even the tiniest bit about the preparations and really make our day !!
Though a single word isn't enough to express my gratitude (for all your contributions),i think a sincere Thanks says it all!
THANKS A LOT,

HI Hemant,
Iam sumathy,I have been a silent observer of this forum for a long time,I have read all your receipes, and those were were interesting. This weekend I decided to try out something from your website. I found that your musalman biriyani has been appreciated by everyone, so i tried it.
The outcome of that was unbelievable, I usually do biriyani by making the masala and cooking the rice along with it in the pressure cooker. But this time I took the time to do all the steps given by you(by dum) ..It was so great.
Thanks a lot. I appreciate your great work and patience in giving all these different receipes.
I need a favor from you. Can you post a receipe using Soorakai(bottleguard).I get this here(US) in plenty, But I dont know anything to do with it except to make sambhar. Can you help?

Hi,
I had also made kathrikai masala to go with the biryani. The masala was good but tasted more like 'thakkali thuvayal' to me, basically because of the fact that the ground paste consisted mostly of the thuvayal ingredients. Could you please post a recipe for Kathrikai curry and the sweet dish which they serve along with biryani in some of the chennai restaurants.

Dear Hemant G,
I tried the tomato rice recipe , it came out well.
Thanks. There is a small suggestion. Since im very new to cooking , i really didnt understand how many people can eat the preparation. It would be really wonderful if there is some info abt the servings for naive ppl like me.

Hemantji,
As per your suggestions, I tried out the chutney chawal and it came out excellent. (I am sorry that I couldnt post the comments earlier). Incidentally two of our friends were also present that day for dinner. I was a bit apprehensive as to giving something which I havent tried out before. But their response in the dinner table took away all my fears.
I also want to tell you that I tried kara kozhambu, channa kootu in coconut, and the sweet, shrikhand. All those were lip smacking dishes. Kara kozhambu was so good that I couldnt believe that I had made it. Re.Shrikhand, eventhough it took a long time to prepare, it was over in about 15 miutes.[I made only a small quantity because I am always wary of their outcome].
Hemantji, I can only bow to the master craftsman in respect. And thanks a lot for your wonderful recipes.

Seeing that you now you have a website and it's always best to get feedback from those that have tried your recipes, I feel that my above response is not adequate.
So here's my feedback on the Tomato Rice.
It was easy to make. The preparation time is slightly longer but maybe that's because I don't really cook often so my speed of chopping is slow. Also, I like to do everything precisely and organized and that takes a while.
The first time I made Tomato Rice, I followed the recipe exactly and it was loved by my mom. She especially liked the fact that it was tangy and it did not require any additional curries as it was a meal in itself. I, on the other hand, am not really fond of very hot dishes. But my problem was solved by incorporating a little curd with my meal. Nevertheless, despite my lack of fondness for hot dishes, the tomato rice tastes delicious! Eating a pappadum with it made the meal even better.
The second time I made it with a little less chilli powder and chillies. The rice turned out fine but my mom had said that she liked the earlier version better. I liked both. But I guess the best option is to follow the recipe exactly and if one has a problem with the hot flavour of the dish, then they can add a some curd while eating. It tastes great both ways. I can't wait to go home and try some home-cooked food again.
Also, I must say that the recipe for Tomato Rice is very easy to follow and could be done by anyone even if you are just beginning to cook or if you want to show off your culinary skills to your parents (like me).
Thanks Hemant for providing that recipe and other recipes as well. I don't think it's mentioned enough.. :)
